Ingredients for making shrimp souffle:

 3 tablespoons of olive oil

 1 medium onion, chopped or grated

 ½ stalk of leeks (or 1 large clove of common garlic)

 400 grams of fresh clean shrimp (without heads and without shells)

 ½ lemon

 white salt and pepper (to taste)

 4 eggs (separated yolks and whites)

 grated parmesan cheese (for sprinkling)

Bechamel sauce:

 1 tablespoon of butter

 1 cup of liquid milk

 3 tablespoons of wheat flour

 salt and grated nutmeg (to taste)

How to Make Shrimp Souffle:

Separate all ingredients from the recipe to facilitate the process.

In a medium skillet, saute the onion and leeks (or garlic) in olive oil until lightly browned.

Add the shrimp and let it simmer until lightly pink. Turn off the heat and set aside.

Tip: If there is a lot of excess broth forming, remove it with the help of a spoon and reserve this broth for the preparation of another recipe - it can be used as shrimp broth!

To prepare the bechamel sauce, heat the butter and then add the flour, mixing well with the help of a fouet.

Add milk little by little, stirring until the sauce thickens, as shown in the photo. Season with salt and grated nutmeg.

Mix the shrimp stew with the bechamel sauce and set aside.

When mixing the filling with the egg whites, it is important to do the procedure gently, with circular movements from the bottom to the top, until everything is incorporated.

Tip: Keeping the air of the egg whites and the mass of this souffle very light and airy is essential so that it doesn't wither all after baking!

Arrange the mixture in a form suitable for souffle, greased and floured. Sprinkle grated Parmesan cheese and bake for approximately 30 minutes, or until golden, with a high, fluffy appearance.

Tip: Remember that the oven must be preheated to 200 degrees when you put the souffle to bake.

When you finish roasting the souffle, avoid abruptly removing it from the oven so that there is no thermal shock and it wilts quickly. If possible, leave it for a while in the oven with the oven door ajar and then take it out to serve.

Tip: Don't worry if the souffle wilts a little. It is natural for this to occur due to the change in temperature. This will not change its taste.
